Line them up!



Breaky for the kids generally looks like this.

A plate of sliced fruit, mannabears and a drink - today its a banana shake and our great raw cereal. You don't need much - its very filling.

I had two apples and a bunch of grapes for lunch. I also ate 5 wafer thins ( wheat biscuits) with a creamy tomato dip at Jos after our meeting. ( but no tea of coffee)

I bought another 6 punnets of blue berries today and Lilly and I scoffed a punnet each!

For dinner I made a few dips with cut up carrot, broccoli and zucchini to accompany a green smoothie ( watermelon and spinach) and a yummy blueberry dessert.



Spinach and Almond Dip

Soak a few handfuls of Almonds for 4 or 5 hours.
drain and place in blender with 6 large semi dried tomato halves, a handful of baby spinach, a few shakes of salt and the juice of one lemon.
Blend roughly - enough to combine ingredients and get a creamy consistency - but allow some larger pieces to remain.

This is really good if left for a few hours to blend the flavours.

Ratatouille

Finely chop zucchini, onion and tomatoes - even amounts.
add juice of one lemon and good sprinkling of celtic salt.
mix well and allow to marinate for 4 or 5 hours.

really nice on its own or as a chunk dip.



Cashew Cream

soak several handfuls of cashews for 3 hours - only just covering nuts with pure water.

pour whole bowl ( water and all) into blender, adding a spoonful of honey or yucon syrup and a dash of vanilla.

blend till creamy - YUM! you won't be able to tell the difference between it and real cream..

We had it on blue berries with a cherry on top... of course!!
