Beetroot

We have been getting into Beetroot, carrot and apple juices lately.

There is no way to say this politely - but if you do this - your poo will be red and the first time you see if ( if you are so inclined as to look - like my kids do..... and then report back...!) Your wee also gets a bit pink too.....but enough of the graphics...

Beetroot is a good source of folate, potassium,manganese and fibre. There is the claim that is can cure cancer (due to the phytochemical betacyanin).

Beetroot Tips

• The smaller the beetroot, the younger, sweeter and more tender it will be.
• Older beetroots are larger, and have more thick root hairs. They can get a bit
gnarly and woody - with less to give when juicing - so try and get the young ones!
• Beetroot skin is thin and delicate so always wash the dirt off gently.
• I've heard of using beetroot as a child-friendly pink food colouring for icing cupcakes and other
special treats ( if y ou aren't do ing 100% raw!!)
• Store beetroot in the fridge until you are ready to use it. The leaves don’t keep for long as the roots.
• Beetroot leaves are naturally high in sodium, and make a tasty addition to salads.
